
It’s beginning to look a lot like Christmas! The past two weeks, high school culinary students have been planning for and preparing holiday cookies and candies to share with each other in a holiday cookie and candy exchange. Each class selected one cookie and one candy recipe to prepare. Recipes included: Snowball Cookies, Red Velvet Cookies, Turtle Candies, Peppermint Meringue Cookies, Sugar Cookies, Peanut Brittle, Cake Pops, Hot Cocoa Cookies, and Oreo Truffles. In addition to producing a consistent, quality product, students focused on implementing the food safety and sanitation skills they have learned, as well as time management skills.



The middle school travels to Pretty Prairie for basketball tomorrow, December 15.

We at the school were made aware of a situation where a possibly dangerous individual had walked away from the hospital. In response, the school went on a lockdown starting with a lockdown in classrooms for maximum safety, and then releasing the lockdown to the inside of the school building. The person was in custody quickly, and an all clear was called.
The faculty and staff did an amazing job of protecting our students, and we cannot thank our local law enforcement enough for their response and the amazing relationship they have with our school.

Culinary Arts II students are learning about molecular gastronomy by preparing fresh strawberry and kiwi "noodles" using the direct spherification method. The original intent was to make fruit "caviar", however the puree was thicker than anticipated - individual droplets were out of the question, so the alternate plan was "noodles". Students checked the pH of the puree to ensure it was at 4.0 or higher - both the strawberry & kiwi puree required the addition of sodium citrate to raise the pH to ensure the sodium alginate would activate. After preparing the puree, the mixture was refrigerated overnight to allow air bubbles to dissipate. Today, students prepared a mixture of distilled water and calcium chloride that the puree was piped into to create the "noodles". Once the students got over the texture and appearance of the finished product, they enjoyed the flavor of the "noodles".
